Spicy Smoked Cashew Enchiladas
•2 cups raw unsalted cashews, soaked for 2 hours and rinsed well
•1 ¼ cups enchilada sauce
•½ cup corn kernels
•8 corn tortillas
•8 kalamata black olives, pitted and chopped
•2 tbsp. water
•1 tbsp. apple cider vinegar
•1 tsp. hot smoked paprika
•Juice of 1 lemon
•Pinch of salt and cayenne pepper
1.Preheat oven to 400F.
2.With your food processor, combine cashews, lemon juice, salt, paprika, vinegar, and water. Blend until finely ground.
3.In a mixing bowl, mix olives and corn. Dip a tortilla on the sauce, place 4 tbsp. of cashew mixture on top, roll up and place in a medium-sized lasagne pan. Repeat layer with the remaining ingredients. Pour sauce over layered enchiladas until almost covered.
4.Bake covered for 30 minutes. Top with sliced avocado and serve.
Baked Catfish with Lemon and Basil
•1.5 lbs. catfish fillets
•2 tbsp. oil
•2 tbsp. fresh basil
• 1 tbsp. raw honey
•Juice and zest of 1 lemon
1.Preheat oven to 400 degrees.
2.Place fish fillets in a baking dish.
3.In a small bowl, combine oil, lemon juice, basil, and honey. Pour and rub over fish fillets.
4.Bake at 400 degrees for 15-20 minutes until cooked through.
5.Serve with steamed asparagus.
