Who doesn't love cake, a really good cake is an answer to many things. I just made a delicious three layer lemon blueberry cake with cream cheese frosting, for my daughter and son-in-law's birthdays. Without really knowing it, I followed most of the tips that the author gives us in her new book.

The author, Rhonda S. Brooks, has written a book, giving us her best tips on icing a cake. Her first suggestion is to bake a cake from scratch, which I always do. She does say that a cake mix is OK, but look at the list of contents. She also recommends three layer cakes, as I usually make. I learned a new word, 'how to tort a cake'. To tort a cake is to cut off the little bump on top of the cake so that every layer is equally sized and flat. I usually use a serrated knife, but the author uses a special piece of cake equipment to cut off the bumps.

Icing and filling a cake are the next topics. Filling is whatever you use in-between the cake that is not the frosting, lemon, chocolate filling etc. The author uses buttercream for her icing, and she makes a big batch. She ices using a thin layer of icing as a crumbling technique. She usually refrigerates the cake after the first icing to let it set. She then ices with the cake the second time. Her technique for icing her cakes is quite unusual and unique. If you are really into cake baking and icing, then this technique will be very useful. The cake looks gorgeous at the end.

The author then talks about 'how to dowel a cake' and how to 'stack a cake'. These are necessities if you are making an elaborate cake such as a wedding cake or a birthday cake. Her tips are well founded, and show a good technique. Excellent photographs accompany each step, so that you can see for yourself exactly what step looks like. I found the photographs extremely helpful and useful.

I would recommend this book to anyone who likes to bake cakes, or anyone who is interested in good baking techniques. This is an excellent guide for anyone. This book was provided to me to read and review.
