#1 “Stir-Fry Vegetable Tofu with Oyster Sauce” is from the March/April 2008, issue of EatingWell magazine and really called ”Kung Pao Tofu” posted on their web site eatingwellDOTcom with no attribution. The funny thing is the ingredients list leaves out the “1 red bell pepper, cut into 1/2 –inch dice” but DOES include the red pepper they left out of the ingredients list in their directions. It’s a tough job to rip-off the recipe, re-arrange the ingredients so they make no sense, don’t follow the order in the instructions and not leave an occasional ingredient out as Encore Publishing did here. Encore Publishing does that quite frequently.

The book says ”4. Put the broccoli, yellow and red bell pepper to the pan and cook. Stir occasionally until beginning to soften for about 4 minutes. Put the ginger and garlic and cook. Stir until fragrant for about 30 seconds.”

The site says “4. Add broccoli, yellow and red bell pepper to the pan and cook, stirring occasionally, until beginning to soften, about 4 minutes. Add ginger and garlic and cook, stirring, until fragrant, about 30 seconds.” See the derivative similarity?

#2 “Sesame Flavored Noodles with Tofu, Asparagus and Cucumber” which is really “Japanese Tofu Noodles” which is recipe #28761 off tasteDOTcomDOTau from page 32 of ”Super Food Ideas February 2012 issue. Again, Encore Publishing gets things a little wrong. They have soba noodles in the list of ingredients but never tell you to cook them or how to cook them in the instructions They confuse rinsing the tofu (which the recipe never calls for) and the need to cook the noodles which Encore never mentions. Weird mistakes for sure.

#3 “Creamy Curry Tofu Soup” is really “Golden tofu soup” posted on chatelaineDOTcom and owned by Rogers Media in Canada. Here’s another weird boo-boo by Encore Publishing. They left out the leek/onion ingredient but tell you how to clean the leek and what parts to use in their first instruction! Encore is even bad at lifting recipes accurately off the Internet sites. Go to the official web site for better recipes would be my advice.

#4 “Chili Tofu with Beans and Tomatoes” is really “Easy Tofu Chili” off the wildwoodfoodsDOTcom site which is owned by Pulmuone Foods who owns the registered trademark SprouTofu listed in the recipe in this rip-off recipe book by Encore Publishing who left off the ® character out of their fake copy of this recipe. Bad boys, Encore. They did get all the ingredients in the list this time including the same punctuation except for the Registered Trademark symbol left off the Registered Trademark Pulmuone Foods owns as explained above.

#5 “Spicy Rice Tofu with Spring Onions and Parsley” is really “Spicy tofu kedgeree” that appeared in the November, 2009, issue of “Good Food Magazine” and listed on the Internet site bbcgoodfoodDOTcom recipe #13141 without the fish. It is predominantly an Indian dish but the British added the fish as the site suggests serving fish along with it.

And on and on and on, just more recipes ripped off from copyright Internet sites. Encore Publishing is also an incompetent publisher because they have their cut-and-paster people make so many mistakes on the recipes. The books are basically worth nothing because of all the mistakes.

I got this cookbook to add variety to my vegan lifestyle. Many of the reciepes call for animal products. Would not purchase this book.

Tofu is blan straight from the package and the recipes in this ebook provided ingredients that tofu could absorb the flavors from. My two favorites are fried tofu and the peanut butter one. The only thing missing is pictures to compare my creation to or to entice the hesitant to give a recipe a try.

I have changed my diet for health reasons and really needed to find tasty recipes that are also healthy. This is one of several books I purchased from Amazon to add to my collection of books with good things to eat. You can to teach an old dog new tricks!
