Juliano's recipes include Butternut Squash Soup, New Moon Fruit Stew, Thai Green Papaya Salad, Living Buckwheat Pizza Crust, Mango Essene Bread, Mock Salmon Sushi, Raw Spring Rolls, seven varieties of burritos, nine varieties of pizza, and nine unusual smoothies. Desserts? Try EZ Pudding (made with maple syrup, avocados, and carob powder) or Cashew Gelato (cashew butter, maple syrup, and almonds, served frozen). There are also condiments, dressings, and sauces, and plenty of information about preparing raw foods, including how to soak and sprout beans, grains, seeds, and nuts.

It may seem like cheating, but a food dehydrator is permitted to "bake" pizza, cookies, and breads. It blows hot air, but never heats foods hotter than 120°F, which, claims Juliano, "allows all the delicate nutrients that are usually burned out of cooked foods to remain intact." Raw is filled with gorgeous color photos of the foods in all their vibrant colors and a number of photos of the vibrant Juliano (not in the raw). The book is wonderful. As the other reviews state, it has great design and pictures. The food takes some getting used to, however. As someone who has been a vegetarian their entire life I didn't expect to have any trouble with the dishes. My first experiment with a burrito recipe produced something that I couldn't even swallow (and took most of a day to prepare). After more recipes and experimenting, I've learned to follow the recipes with caution. I would recomend adding the "Nama Shoyu" (an ingredient similar to soy sauce in nearly *every* recipe) last to the recipes and in small amounts. Several of my trials were way too salty because of it. Also, be careful with the addition of ginger unless you really like its flavor in everything. Aside from the reliance on the basic combo of Nama Shoyu, ginger, garlic, and jalepeno, many of the recipes are very good. I particularly enjoyed the desserts. Overall a good book, but not for those that are in a hurry or not really into veggies.

For a 100% raw-food eater such as myself, this book is a gourmet godsend. It's also a great introduction to raw/living foods for people who want to be able to eat healthy but still feel decadent.
You could eat most of the luscious desserts in the book three meals a day and be eating healthier than 99% of the people on the planet!
It's much more imaginative than any other raw recipe book I've read (and I've read most), and with it's big color pictures, it's sure to delight.

Leider sind nicht zu allen Rezepten Bilder dabei, was bei einem Kochbuch gerade in solch speziellem Bereich für mich sehr inspirierend ist.
Also hier muss man mehr LESEN als SCHAUEN :-)
Dennoch tolle Rezepte, kreatie Ideen und tolle Alternativen.

I had the enviable opportunity of dining at Juliano's restaurant in San Francisco this past summer. Being new to raw foods, I was not sure what to expect. The food was absolutely delicious, out-of-this-world, and beautifully presented. The textures and flavors were amazing. The experience inspired me to learn more about raw foods and to put _Raw: The Uncook Book_ at the top of my Christmas list. Luckily, I did get this as a present, and I made one of the recipes this evening. It turned out great! My sense of the recipes is that many are somewhat complicated in that they cross-reference other recipes, but that you can take short-cuts to "ease into" this cuisine if you don't have time to do everything. Ultimately I believe Juliano's claim in the introduction that with a little practice, raw food preparation takes less time than cooked food prep. Finally, the majority of ingredients are not that exotic and easily obtainable in most regions. The book is filled with humor and beautiful color photographs. I highly recommend it!

This truly is the most beautiful "cookbook" I have ever come across. I am new to raw foods and I especially liked Juliano's gentle approach. He seems to have such a love for preparing food that his excitment rubs off on the reader. The recipes are easy to follow and easy to adapt, if need be. The book is loaded with information and hints on everything from stocking the kitchen to how to sprout beans. In the week that I have had the book, I have already prepared several recipes and tonight got up the courage to prepare his "Pasta Marinara" with the most amazing sauce! I only needed a knife, a vegetable peeler, and a blender to prepare this gourmet meal. Quite a treat for a busy stay-home mother of toddler twins! I highly recommend this book to anyone who loves to enjoy truly good food.

I practically never cook but I will 'uncook' quite a lot now that I have RAW. I visit San Francisco every 3.7 months and eat raw at Juliano's restaurant every chance I get. This is by far the best food I have ever had (vegetarian or otherwise). This is the one recipe book that won't just sit on the shelf!

Reading through the intro. you will discover that Juliano is eccentric and adventurous. His personality shines through the recipes.
I could sit for hours and lust after the very appealing dishes and gorgeous pictures. Alas, I have to make them in order to get a bite(the pictures are so clear that you would think you could taste them off the pages!)
Well I have prepared them and they are just as marvelous as I thought. As a newish raw fooder, I am surprised by the miracle of appetising Living/Raw food dishes. But so thankful that there are "uncook" bks out there like this!
I have no trouble finding the appropriate ingredients. The only daunting aspect is the recipes that call for sprouted seeds, etc.
But as this is a foundation of raw eating, I know that in time that will be a part of my weekly un-cooking, eating program. And there are plenty of recipes without worrying over that, to stop me!
As someone who has suffered with excruciating chronic pain conditions, I am thrilled to say that eating this way has been a miracle in my life.
YAY! for recipe books and information such as this! May all the world become healthier and happier through better eating!
