It's been a while since I've been unreservedly impressed with a cookbook. My family and I love Asian foods and Asian-style cooking. However, I have not focused on Japanese cooking because I'm a bit intimidated by it. I've always thought it to be too complex for my average cooking skills. When I came across this book, I thought I would give it a try.

Right from the beginning, this book reassures the Japanese cooking novice that Japanese cooking is possible for virtually anyone. I'd like to write a few quotes from the book that particularly resonated with me:

"To many Americans, Japanese cooking seems mysterious and inaccessible. The truth is that is is quite easy and surprisingly quick."

"Just like Japanese watercolor, basic Japanese recipes are unfussy. Most of the prepping and cooking methods will be familiar to you, and you won't have to hassle with lots of ingredients, steps, and hours at the stove. No recipe is foolproof, but its hard to ruin these simple recipes. You don't have to measure out a slew of spices, and there are not gravies to go lumpy, roasts to dry out or cakes to fall."

This book breaks down everything you need to know about Japanese cooking. It mentions the tools you need, the specific ingredients and the preparation methods. All of these things were surprisingly less complicated than I expected.

The recipes are straightforward (the instructions are clear and easy to follow). The recipe categories are as follows:

- Rice
- Soups, Stews and Hot Pots
- Noodles
- Salads, Vegetables, and Garnishes
- Tofu and Eggs
- Sushi
- Fish and Seafood
- Poultry and Meat
- Sweets
- Bento Boxes

The book is well edited. I didn't see any typos or errors in logic. It has an active table of contents for easy navigation. There is even an appendix with links to on-line merchants who carry items you might need if you can't find them locally. Don't get me wrong, you will probably be able to find most of what you need at a regular grocery store.

It's not too often I find I book I can wholeheartedly recommend. I enjoyed reading this book, not just for the recipes, but also for the non-recipe content. I'll be referring back to this book for years to come.

Japanese Cooking Made Simple worked well for me in the kitchen.I love Japanese food but have little experience cooking it. I have read dozens of cookbooks and it is difficult to find books that make complex meals seem easy. My favorite recipe was for the Spicy Scallop Temaki, but I also enjoyed the Shrimp and Kiwifruit Nigiri. Both took me about 20 minutes to prepare, but they tasted amazing. The book went through and taught me the basics, like how to make Japanese Mayonnaise and Sushi Rice. I also learned a lot about how to buy seafood and how to look for the sustainability logo. I think my cooking has improved quite a bit since I started reading this simple cookbook. I'd highly recommend it to anyone looking to make tasty Japanese food in their own kitchen.

I was pleasantly surprised by this book! After living in Japan for two years, I have been craving some of the traditional menu items that are difficult to find in the states. Most cookbooks I've found are very Americanized, however, and don't offer very authentic choices.

This book is a nice blend between traditional Japanese and Western adaptations. It contains instructions for how to make sushi rolls common in American restaurants, but also includes dishes such as "oden" that are popular in Japan but rare in the U.S. If you can find the ingredients, the recipes are definitely worth it!

My only complaint is the lack of pictures. I like to have a better idea of what I'm cooking, especially when it is an unfamiliar dish.

Learning authentic Japanese recipes for my own kitchen was simple yet detailed with this book. Not only does it self profess to “clear the air of mystery that surrounds Japanese cooking” but it also elaborates on the conceptual truth that Japanese cooking techniques and food preparation is an aesthetic art form deserving of highest appreciation. The first chapter details the fundamentals included in purely original Japanese dishes, so creating your own true version of Japanese cuisine becomes both plausible and delicious.

Appreciation expands for the historical significance and artistic variety that goes into creating/ displaying these meals. By including detailed descriptions of must-have ingredients and tools, this book is a step-by-step guide for anyone looking for recommendations to enhance creating authentic Japanese cuisine in their own home.

I'm excited to start cooking from this book, but I'm genuinely disappointed in the fact that there are no pictures. It's not like I can't get around without them, they just help with the inspiration. Good recipes though!
