I am Japanese and I have seen so many different "asia", "japanese", "sushi" cooking books before and they are all too far away from what I have grown up eating.
This Henssler's book shows very similar food I eat everyday. In his Vox show, which seems already finished..., he introduces Soja sauce, Panko, Wasabi, Miso as Japanese. He never used the word "asia" because he knows Asia is too broad and not approapriate to describe the ingredients. I like him because he appreciates Japanese cooking and I appreciate that.
I like his way of cooking, cooking everyday food with everyday ingredients, that's what we do in Japan everyday.
We dont eat sushi everyday, just like German do not eat Eisbein everyday.
We dont buy special ingredients for everyday cooking, and if a recipe that you are looking at now asks you to buy many expensive ingredients, forget about it, and get this book, or go to vox homepage before they shut down.
