One of the best bread books ever,

This is a big book with a lot of techniques, tricks and recipes. It might look too technical but once you understand the basics of doing bread this is a valuable book. Highly recommended for home or professional artisan bakers! Even if it is said that is not a beginner's book, reading and understanding the steps makes you learn very quickly how to make good bread. I have other bread books as well but this one I prefer the most. What I would have liked more is to have a photo of the bread near the recipe. There are photos of breads grouped together but is not the same. Nevertheless, the knowledge that you get from this book is great. I am a fan of sourdough breads and I am very happy I could find here a lot of recipes with sourdough. All basic breads are also included (based on sourdough and yeast) and there are a lot of original recipes as well. I have also tested some of the recipes and they work very well. One trick I can give is that the US type of flour is a bit different from the European one, so when doing the recipes, add one tablespoon of flour per loaf more than the recipe indicates. Or you can stick to the exact quantities in the recipe and you'll get a more wet dough than foreseen. This is not wrong either, just more difficult to handle.
