This cook book is probably the best I've come across in the last decade or so. Denis Cotter is such a huge talent, you immediately sense these recipes are in a class of their own, some simple, some requiring a little skill and attention - but always mouth watering. Combining savoury with fruity, sweet with sour, tangy with smooth, he presents a range of seasonal dishes that will mesmerise even fundamentalist meat-eaters. It's little wonder the Paradiso Restaurant in Cork was voted Restaurant of the Year and this book was awarded Best Cook Book in The World status by an international Jury. The charm of Cotter's book also lies in the little anecdotes he tells, usually directly to do with a recipe. This guy is passionate without ever preaching (except when it comes to the choice of fresh seasonal bio products, but then his descriptions of textures, tastes and smells are such that one really wants to get the best ingredients). It's the sort of book that makes you want to cook every day, also beautifully illustrated and intelligently structured). A must for every vegetarian and non-vegetarian who enjoys superb food.
