I disagree with those who said Madhur Jaffrey's Indian Cooking was simpler--I found this one easier to follow and the recipes less complicated, yet equally as delicious. For the beginner, Sahni also takes time to explain basic techniques, concepts, and spices which are necessary to Indian cooking but may be unfamiliar to Westerners. She even explains how to make chenna and paneer (and then how to turn it into ras malai, which I recommend highly).
The recipes included are wide-ranging (definitely more in here than Jaffrey's) and an excellent introduction to Indian cooking. It's the best basic book on the subject I've used.

Like The Cake Bible, this is a very detailed, incredibly researched book. Ms Berenbaum tolerates nothing short of perfection. If you're interested in EXACTLY how to make the perfect pie crust or puff pastry, this is for you. If you find analyses of Heckers flour vs King Arthur mind-numbing, you might want to pass it up and go back to the baking chapter of The Joy of Cooking.
Although it's geared towards the more serious baker, it's useful for novices too, as the instructions are very detailed and she goes to great lengths to explain why she does everything she does (this is good for bakers of all abilities, because some of her techniques are nontraditional).
Many of the recipes are time consuming, but they are worth it--gorgeous to look at and delicious to taste.

... it isn't for everyone.
The recipes are excellent and she's tested every variable known to (wo)man (down to different brands of chocolate). However, if you're just a casual home baker who doesn't appreciate or isn't interested in this kind of perfectionism, you'll hate the book and Ms Berenbaum's approach. This is a book for the serious baker.
It's for this reason that I'm leaving off a star. For me, it's perfect. However, the title might lead people to think it's suitable for anyone, and it isn't. While you don't have to be a professional, you do need a basic understanding of baking techniques and a desire to make perfect cakes.

Ms Jaffrey does take the time to explain concepts, spices, and procedures. Unfortunately, not all the recipes seem to turn out perfectly, and the American publishers failed to edit the book well. It was originally published in the UK, and if you're not familiar with British terms and the weight system of measurement (e.g. grams of flour) you'll find it confusing.
