I spent 20 years as a chef in the restaurant industry, and 4 of those as a culinary educator. Throughout my career I've seen many "complete books" come and go, but there's always something missing... until now. This complete book is compiled in such a way that it actually bridges the gap between formal culinary text book and consumer user guide.

The book is well written by two authors with obvious first-hand knowledge of the subject matter. Nearly every page features vibrant photographs and illustrations to support the text and often with directional arrows to explain movement. The steps are clearly numbered, the text is concise, and I can say from my professional culinary experience, that the information is sound. It's a great book at a great price.

Can't recommend this book highly enough. Had been looking for a local cooking school to take a knife skills course, but bought this book instead on a recommendation. Very easy to follow (even for a relative novice), and I have drastically cut (pared? sliced? chopped?) down prep time, while hopefully diminishing the chances of losing a finger... Would have been a 5+ star rating if the book explained why the knife sharpening guy is only at the farmers' market on the days I don't bring my knives.

I've been needing this book all my cooking life, only I didn't know it until I got it. Thorough, detailed, with great photos, easy to follow, a pleasure to read. I read it through and now keep it handy so I can refer to chapters as I need them. Just got it and it's already the most useful book in my kitchen. Have ordered more for gifts. Can't recommend it highly enough!
