Katz is so knowledgeable and has such a nice voice. The pamphlet is a pleasure to read and has really rounded out the knowledge about fermentation I'd been scrapping together from the internet. Now I'm interested in his big book on it. But overall this was a lovely way to get started with him. The recipes are simple, clear, and versatile. They're the foundations for variations. He also recognizes that fermentation isn't a science, which makes me feel more confident about tweaking things if need be. A great guide.
