Charity Wilson is the loving mother of four children, well five if you count her husband of over 25 years. She has worked in various jobs over the years but realized one day home is where she needed to be. After a lot of deliberation and research, she decided to become a full-time writer. She loves to cook and create new recipes which you will find shared throughout her various cookbooks. She stays up to date on the most current diets but doesn’t particularly follow any one of them. She eats to enjoy while consciously watching her health. She knows people need a variety of recipes to avoid the boredom that leads to weight gain and tries to fill that void. Her passions don’t stop at cooking and she is an avid gardener, organizer and loves reading. She is known amongst the kids in the sports community as “the lady with the best chocolate chip cookies ever.” She enjoys being able to watch her children play sports and is quite active herself. In the end, you could call her a homebody. Charity is all about living life with passion and enjoying every moment. Life is about enjoying good food, great company and waking up every day happy to do it all over again.

In the wake of California's water crisis, my conscience has been gnawing at me to really give the vegan diet a chance. If I reduced my intake of dairy and meats, then the water going into feeding animals would dramatically lessen and can be diverted to growing foods to feed people. So why let my worries about not enough calcium or iron plague me?

When I saw this book on special offer, I jumped at the chance to get it. A great deal, since this book is divided into eight sections:
Side Dishes

My only quibble about this book is that it uses a lot of soy alternatives (e.g., tofu, soy chorizo, edamame) to substitute for protein. Since someone in my family has soy allergies, I've had to be creative to think of what could substitute for the soy for some of these recipes. Otherwise, this is a really good book that gave me fresh ideas that left me feeling hopeful about the slight changes and modifications I've planned for forthcoming grocery trips.

This is a nice book, although it could do with some pictures. The recipes are good, easy to follow and tasty to eat. This is possibly more aimed at vegan newbies, as I have come across most of the basic ideas before when I first turned vegan (20 years ago). It is though always nice to see new twists and have a handy collection of recipes like this.

Great easy to follow recipes that even the 'slackest' of cooks can cook. The spicy soba noodles were absolutely delicious! I cannot wait to try the rest of them and then pick my favorite and invite my friends over for a vegan dinner party!
