Author/chef Bryan Rylee has a passion for new cuisine ideas. His travels in search of the exotic in foods has resulted in his living with the Basque people of Spain and France, exploring the Mediterranean coast and deep into the countryside of Turkey where he discovered the Turkish fusion of far eastern tastes and North African culinary treats. His adventures have included the cuisines of Scotland, northern England, the islands of the Caribbean, and Iceland! All of this he is translating into books on the various cuisines he has sampled from his home base in San Francisco. Rylee shares his culinary secrets and discoveries of the numerous cultures in these beautifully illustrated cookbooks.

After a brief but illuminating history of Persia this book addresses Persian vegan recipes and it is at once exotic and rich with excellent recipes made easy Rylee's inimitable style of presentation. `An interesting fact about the Persian cuisine is how people used to choose their daily food combinations. They believed that keeping a balance between hot and cold or dry and wet in diet is the key to a healthy body and mind, therefore they always tried to combine a hot food with a cold one. Fat, meat, wheat, sugar, dried fruits and vegetables were considered hot foods while beef, rice, dairy products and some fresh fruits and veggies were considered cold foods. Whenever a menu was planned, this principle was taken into consideration so they always ended up with one hot food and one cold food on their plate.'

His instructions are easy to read and follow and along the way he adds some great color photographs of some of the delights. And speaking of those delights, this book includes the following categories along with the recipes contained in each category - Appetizers: Walnut and Cucumber Creamy Salad, Artichoke Heart Dip, Baba Ganoush, Green Avocado Dip on Tasted Bread, and more. Salads: Orzo and Green Olive Salad, Fattoush Salad, Persian Carrot Salad, Persian Chickpea Salad and more. Soups and Stews: Persian Herb Soup, Persian Mushroom Stew, Pomegranate Soup, Persian Eggplant Stew and more. Main Dishes: Vegie Stuffed Bell Peppers, Persian Potato Gratin, Potato and Prune Casserole, Kateh (Persian Rice), Walnut and Rice Balls, Persian Pilaf, Vegetable Curry, Fried Eggplant Casserole, Falafel Loaf and more. Desserts: Spiced Rice Pudding, Persian Melon Popsicles, Persian Halva, Cinnamon Date Cake and more.

Rylee closes his book with some interesting information: ` Bottom line is that the Persian cuisine is exotic and colorful, varied and fragrant, flavorful and balanced, it is a cuisine that will teach all about spices, herbs and fresh ingredients, a cuisine that somehow manages to balance ingredients that you rarely think of. All you have to do is keep an open mind and a bold palate and try the recipes found in this book. They've all been designed to accommodate the needs of a vegan in search for Persian recipes so go ahead and start cooking.'

Author and chef Bryan Rylee has an interest for brand-new food concepts. All of this he is equating into publications on the different foods he has actually tasted from his house base in San Francisco.

An appealing side note regarding Persian food is just how folks made use of to pick their day-to-day meals combos. Fat, meat, wheat, sweets, dried out veggies and fruits were taken into consideration warm meals while beef, rice, milk items and some fresh fruits and veggies were thought about chilly meals.

Rylee's guidelines are simple to follow, and along the road he includes some excellent color photos of a few of the tasty recipes.

I had never tried Persian cuisine before, so I was interested to give it a shot. At the back of my mind, I've always had it that I wanted to eat healthier but it's a so-so thought, you know? A friend at work showed me something she'd made from this vegan cookbook; it was delicious! I bought the book for myself not long after.

Each recipe is well-crafted for maximum flavor while still keeping to the traditional vegan values. I'd looked at some vegan cookbooks before, but wasn't impressed with the level of quality in the dishes. Rylee is a master of his science, and it really shows through in each dish.

I don't know what I was really expecting out of a vegan cookbook, but this was a real treat! I feel more inspired to incorporate vegan meals into my family's weekly dinners, and maybe just Persian cuisine overall. I'm very satisfied with this cookbook!

I had no idea Persia had such a rich and exciting history, especially when it comes to food. Rylee really helped to illuminate Persian cuisine in a way that is fresh and inviting, and each recipe in this vegan cookbook is a testament to the durability and heartiness of the Persian people.

I only recently started eating vegan for health reasons, so this cookbook couldn't have come into my life at a better time! Other vegan cookbooks I've tried out are pretty bland and uninspired - being vegan doesn't mean settling for no taste, like some seem to think. On the contrary, the vegan cookbook Rylee put together is amazingly full of rich, tasty foods. I'm hooked!

Some of the recipes are not Persian they are Arabic or Turkish. fattoush and Hummus are not from Iran. Which brings me to mention that the author needs to know that Persia is Iran. Perhaps it should be titled he vegan cookbook form Middle East. I like how he has simplified some of the recipes and substituted tofu for the meat or omitted the meat completely.
