Growing up we always gathered at my Grandma's house on Friday night, where she would serve up either hot dogs wrapped in bacon or pizza to the clan. Now, you may ask why on earth a French & English Grandma would be serving up pizza in mid-20th century New England when most small towns did not even have a pizza parlor. Grandma, like most other young women in the heavily industrialized Northeast at the end of the 19th century, left school when she finished the 8th grade to work in a factory. One of her best friends was a woman she met in those days who taught her how to make pizza and pizza sauce, among other things Italian. So, every summer we canned pizza sauce and every Friday pizza we ate and I've loved it ever since. Most Friday nights I've served up pizza to my family and rare is the day, even though I now live alone, that there is no pizza dough in my fridge. Nothing is better than good homemade pizza, except perhaps leftover pizza for breakfast the next day! And let me tell you a secret . . nothing is easier to make either, once you know how.

Whether you've never tried your hand at making pizza or just want to make your pizza better, Secrets From Inside The Pizzeria is a goldmine, absolutely brilliant with tips, recipes and answers for virtually every question you might have. The book is extremely well organized and author Beverly Collins has thoughtfully included links to dozens of resources for both equipment and the right kind of flour for perfect New York style pizza. (Yes, there is a recipe for Chicago style deep dish too as well as a recipe for a crust that does not need to be aged.)

One of the very best pizza cookbooks I've come across, Beverly will have you turning out the best pizza in town quickly and easily. This is one I can't recommend highly enough. Many thumbs up. Anchovies, anyone?

I've just spent an enjoyable day reading through Bev Collins' Pizzaria Secrets. It is so helpful -- and now I understand why my previous attempts have been such a disaster. I've gathered pizza dough recipes from various sources -- including my beloved Julia Child -- her's was the most atrocious, alas.

Can't wait to get started. If you love pizza -- buy this book -- not only is it easy to follow -- with admonitions that you might have a few failures along the way -- but one of the best parts is the email section -- I learned so much from reading that part.

Once you start making your own pizza you'll never want to eat delivery again!

I really liked how the author really explained the ins and outs of a pizza instead of just compiling a bunch of recipes. She gives you enough knowledge to customize and personalize your own (great tasting pizza). I also appreciated how the author suggested alternative methods/ingredients/supplies for those who just want to test the waters. It's more of an instruction manual than a cook book.

Recipes work well, some need a little tweaking, as author indicates. Too much space devoted to her corporate life with Domino's Pizza, who as far as I'm concerned makes the worst pizza on the planet. I am interested in the science & techniques, rather than too much boring biography. If you must include the bio, at least make it somewhat entertaining, or interesting.
