From growing up in a blue collar family in one of the most dangerous areas in France to having a successful career as the head chef in a luxury hotel on the French Riviera at the age of 23, to teaching culinary arts at the University of British Columbia in Canada, my life is punctuated with stories that, even to me, sound somewhat incredible.

Along this path, I have been inspired by people around me who have contributed to my journey and shaped me into who I am today. This first book of my series, Child to Chef Recipe Memoir, is about my grandmother Augusta, who was instrumental to my decision of becoming a chef and also about my discovery that food makes people happy.

With A Gourmand in Training, if I can inspire young adults to overcome their own challenges and live their dreams, I will consider this book a great achievement.

Über den Autor und weitere Mitwirkende

Eric Arrouzé is a French chef living in Vancouver, Canada. Chef Eric spent his early years working in fine dining establishments throughout France, including as Executive Chef in a five star hotel near Monte Carlo when he was only 23 years old. Before moving to Canada, his career also took him throughout Switzerland, England, and Luxembourg. Since 2002, Chef Eric has been teaching various courses, such as French Regional Cuisine, at the University of British Columbia. He also runs a widely recognized online gourmet recipe, culinary travel, and video cooking instruction website, Recently, Chef Eric has become a part of the world famous Chaine des Rotisseurs. Chef Eric´s contributions to the advancement of culinary education have been recognized in publications such as The New York Times, The Calgary Herald, and Saveur magazine.

This is the intimate story of Eric, who as a young boy, already knew that he was destined to be a gourmand.

It's very enjoyable reading, because you can feel his angst and his glee, as he faces his challenges and overcomes them.

I would highly recommend this heart-warming book for anyone wanting to be inspired, to know that dreams can come true; and it will interest Foodies, who can live vicariously through Eric's stories.

I really look forward to his next book of adventures.

Author Eric Arrouzé deserves a large audience for this first volume of his memoir with recipes. His story is wholesome, funny, delicious and inspiring -- a testament to one boy's dogged pursuit of a dream. A real treat for foodies of all ages. And instructional for those amateur chefs who want to improve the meals they create in their own kitchens. The book leaves me with a hunger for more!

I took French cooking classes with Chef Eric years ago in Vancouver, and so I was pleased to learn that he has published the first book of his culinary memoirs. In Child to Chef, Eric Arrouzé traces his unlikely but inspiring path from mischievous boy in a small, blue-collar French town to a successful professional chef, using the same mix of enthusiasm and expertise that made his cooking classes so memorable.

Book One covers Arrouzé's vivid and humorous recollections of his childhood accompanied by 31 authentic French recipes prepared by his grandmother, Mamie Augusta, his aunt and others in the colorful cast of characters who contributed to his early culinary education. These are very tasty classic dishes. This book would make a great gift for anyone who is interested in French cuisine or the life of a chef. It would also be inspirational for any young person exploring a culinary career. I can't wait for Chef Eric's next installment in his culinary memoir series.

This first book in Chef Eric’s memoir series offers a warm and engaging glimpse into the importance of family, food and community in providing us with the love and inspiration to make the most of our lives despite the inevitable challenges. The book is studded with kind, colorful characters who help guide little Eric along as he searches for a way to express his budding culinary interest, yearning for a more fulfilling life than that led by his day-laborer father and harried stay at home mother.

At the end of the book, the reader is left eagerly anticipating how this plucky and passionate boy will make it out of small town Pau, France to fulfill his dream of becoming a great chef, a question that we will hopefully not have to wait too long to have answered as Chef Eric continues working to complete the remaining installations of the series.

Chef Eric Arrouze's recipes are a staple in my home. His cooking is elegant, yet his roots are far from the exquisite cuisine which he is now renowned for. This book is an exciting glimpse into how, from a humble beginning, Eric pursued a lifelong passion for cooking, to become an exceptional chef. The stories of his past allow us insight into the journey, which began as a young boy, and into the recipes which inspire his repertoire of world class cuisine. I purchased this book for myself and all of the "foodies" in my family. It is a volume that I will always treasure. I look forward to reading and collecting the rest of the "Child to Chef" series.
