Now the reference source has been revised, updated and expanded to provide coverage of cane sugar processing, treatment and analysis to meet the challenges of the 1990s. The 12th edition covers new technical innovations that have been developed to deal with the increasing demand of white sugar for both industrial and domestic purposes. The volume places more emphasis on the refining side of the sugar industry, and on the technical management methods that have proved effective in lowering production costs. Expert contributions are included, in the areas of sugar manufacture, cane sugar refining, production and process controls, and analytical procedures - plus numerous reference tables with the latest technical data for cane sugar manufacturing. This edition also contains six new chapters on specialty sugars, plant maintenance programmes, total quality management systems, computerized sugar manufacturing, the automation of a sugar refinery and instrumental analysis for the sugar industry.

The Sugar cane handbook is compilation of the procedures for manufacturing sugar from cugar cane; the practical and easy to follow procedures and the experiences detail in the book are just very good.
