I have a huge cookbook collection. Many of my books I hardly use. This is one of my most used cookbooks these days. The more you use it, the easier and better it gets.

After spending some time in Japan I have always had a fondness for the cuisine. However, Japanese cooking is often intimidating to Westerners due to the lack of even basic Japanese cooking knowledge. This book is superb at bridging that cultural gap. She explains everything you need to know to use her book and the notes are fascinating. You will not believe how simple it is to make so many great Japanese dishes. There is also an extensive sushi section explaining methods and tools. The soups section is especially good, too. You can make delicious authentic soups and noodle dishes easily and they make the cheap microwave versions you can buy at any grocery store seem disgraceful. What's more, you know what is in your soup - chemical free! Her stock recipe alone saves you a lot of time over other recipes I have seen - and it is just as good and never fishy! Done in less than ten minutes.

Overall an excellent cookbook for the complete novice and the accomplished chef in Japanese cooking. WELL worth the effort to read. The book begins with a comprehensive explanation of the esoteric (to Westerners) ingredients. Really great book! Highly recommended! And Japanese cooking is one of the most healthy cuisines on the planet, so it is extremely good for you, too!

There are also a LOT of recipes in this book. The author studied Japanese cooking in Japan and lived there for over 20 years. She knows her stuff! If you love Japanese food, you cannot go wrong with this book.

You will want to find a good Asian grocery store and you will have to buy some basic supplies. The first visit can be an adventure, so take your time to get acquainted with the ingredients and take a list with you! I find I buy a lot of my groceries there now at much better prices and the vegetables are invariably fresher and better quality than a the chain grocery stores.

You will definitely want to buy some Mirin wine, rice vinegar, sushi vinegar several varieties of seaweed, soy sauce and sesame oil and shaved Bonito flakes for the soup stock (katsuo bushi) and several varieties of dried mushrooms and miso and, of course, some quality rice and noodles as a basic starter pantry. The upfront cost of supplies can be intimidating, but they last a really long time, so in the end it is actually very cheap to cook Japanese, too. Read the "At the Market, in the Kitchen" section before you go shopping. And you don't have to buy all of this to start. Pick a few recipes and get those ingredients first.

Elizabeth Andoh's books all include easy to follow recipes. The recipes are well written and tested. You can never go wrong with one of her books.
This was one of her first books and a favorite of mine.
