Jane Mason, a strategy consultant by background, has had a life-long fascination with bread and learned to bake by working with bakers all over the world. In 2010, she started Virtuous Bread to make it fun and easy for people to make, find and learn about good bread. In addition to baking and teaching professionally, Jane works on a voluntary basis with diverse groups including prisoners and school children, using bread as a catalyst for social change. She established Bread Angels in 2011, to teach people how to set up home bakeries, enabling them to work how and when they want, build their local communities, and earn money both baking and teaching others to bake. Jane speaks and writes about bread and its profound role in our lives over time. This is her first book.

Jane Mason founded Virtuous Bread in 2010 to make it fun and easy for people all over the world to make and find and learn about bread and in so doing to forge the link between bread and virtue. Jane bakes, teaches baking, speaks about bread as a catalyst for social change and published her first book, All You Knead Is Bread in October 2012.

Completely self taught, Jane has had the fortune to bake with excellent bakers from South Africa to Sweden, and it is this knowledge of global bread and its role in the lives of billions of people all over the world that makes her special.

She is currently working on her second book and is writing some beautiful booklets on seasonal bread and special bread techniques. On her website www.virtuousbread.com there are videos about all aspects of the baking process from proofing yeast to shaping baguettes. They are a valuable addition to her books.

Das Buch sieht nicht nur enorm gut aus und hat viele wunderschöne Bilder, sondern ist auch sonst in jeder Hinsicht sehr gut gemacht. Man merkt sofort, dass sich die Autorin die Zeit genommen hat, alle Aspekte im Detail zu recherchieren und auszuprobieren. Die Rezepte, die ich bisher ausprobiert habe, funktionieren einwandfrei und es ist sicher für jeden Geschmack und jede Gelegenheit etwas dabei. Von den allgemeinen Infos, über die Tipps zum Kneten und Formen bis hin zu den Rezepten bin ich mit voll zufrieden!

I have a LOT of cookbooks! And as a cookbook author myself (Not Just for Vegetarians)I'm rather particular about what cookbooks I like and use on a regular basis.

I recently got a copy of : All You Knead is Bread and I already know that this will be a baking book I will be enjoying for a long time to come.

Author Jane Mason has created a beautiful bread-baking cookbook. Visually appealing throughout but with so much more than just great photos and a good variety of recipes!

One of the first things I noted in this book was the section on "demystifying sourdough" bread-making! IMO, that's worth the price of the book in itself! I've always enjoyed making scratch and bread-machine breads of various types but when it came to sourdough, I was reluctant to get started. Seemed too complicated to make it worthwhile. Now, I can't wait!

This book also provides a mini-tour of "breads around the world" and shares many tempting ethnic bread recipes including: Irish Soda Bread, Classic French Brioche,Anadama Bread from the Maritimes(what a fun story there is about that name!), Brown Cob from England, Danish Rye to name but a few.

Detailed and precise instructions make the process of baking home baked bread even easier and more enjoyable, for even the novice baker.

Ms. Mason is also the creator of: Bread Angels which enables people to learn bread-baking skills and become home-based bakers.

If you love to bake bread or are just a wannabe baker at this point, this is definitely a book you won't want to miss. Would make a great gift too.

I love bread. So many people are addicted to sweets, chocolate (ok, I do love chocolate), etc, but give me a nice, crusty loaf of bread and I am one happy lady!! I think the favorite meal I've ever had was the first evening of my first trip to Sicily when I was given a couple of thick slices of good Italian bread, three kinds of cheese and a big glass of ice water. I thought I'd died and gone to Heaven! My love for bread actually borders on addiction, so I couldn't WAIT to dive into this cookbook. I've been making bread for years, so I'm no novice, but I wouldn't necessarily call myself an expert, either.

I started with the Olive Oil Rolls. I love, love, LOVE Italian breads, so this was an easy choice. Oh, my! These were so easy to make, and a huge hit with my family. Next I went for the Bridge Rolls. Eh. Not so great. They were okay, but definitely not on my "Make these again!" list. I just made the Biovette. Yes, back to Italian breads. Unfortunately, they were another "Eh". I thought I might have made a mistake with the Bridge Rolls and accidentally added too much salt, but these were too salty as well. I did NOT like the method of looking at the dough like a clock and pulling pieces out until they were thin and gently lay them back on the main portion of dough. It seemed more work than necessary, and I didn't like they way the Biovette turned out doing that (I didn't bother with it on the first two breads). I've never heard of doing the dough that way, and don't plan on doing it that way ever again as I certainly didn't like the results.

I love the information given in the first part of the book; really breaking down all the ingredients and aspects of bread making. Unfortunately two of the first three recipes I made, I really wasn't impressed with the results. That coupled with so many of the breads needing special ingredients dropped my rating for it. This is not a book to go on my favorites shelf.

I received a copy of this book from Ryland Peters for my honest review. All thoughts and opinions are my own.

After eagerly anticipating it's arrival in the post I devoured All You Knead is Bread in one sitting like it was a crusty homemade cob slathered in butter. I shall return to it again soon and be sure to savor every crumb of this delightful book.

It has beautiful styling and photography and I know it is a small detail (but that is where the love is right?) but the paper is lovely sort of glossy but a bit rough at the same time so it is easy to turn the pages and hopefully not easy to stick together with bits of dough.

While it is a treat to sit and read this book it is by no means a 'coffee table book', it is highly practical and meant to be consulted and will inspire you in your home baking.

Aside from all of the wonderful recipes from around the world there is some great information about the evolution of bread and baking and interesting facts and observations about the role and status of bread in lots of countries.

Now I have to decide if I should stay at home and bake a wonderful loaf or book a trip to one of the places featured in the book to sample their bread first hand.

I recommend ordering this book, you won't be disappointed and it would make a wonderful gift for someone who bakes or would like to start.

UPDATE - so I have has this book for over 6 months now and bake from it regularly. I have made lots from hot cross buns to pitta but the one I make most often is the pane di genazaro it is easy to make, puffs up rather satisfyingly and makes a very tasty loaf with a thin crispy crust. Very happy with my purchase

I just received my order and have looked through this book with pleasure. Ms. Mason not only has wonderful pictures of all of the breads, but has interesting history to accompany the recipes. I have purchased numerous bread baking books, but I bet this is the one that is going to get me to pull out the flour, water, salt, and yeast!! Can't wait to try the Stolen and other ethnic breads.

This was a gift but it was well received. My friend was very excited to try out some of the recipes. It is very nice looking and has history about different breads. I am tempted to get one for myself.
